A really simple but tasty recipe!
We like meatballs :-)
1 lb ground chicken (makes about 7 meatballs)
1/2 cup cubed cooked ham
1 large tablespoon of Ranch Mix
Swiss cheese cubes (number of cubes depending on the number of balls)
Breadcrumbs (of your choice, pork rinds or panko)
Salt to taste
In a bowl, mix all the ingredients except the cheese.
Put a little oil in your hands to prevent the chicken from sticking when making the meatballs. Roll out dumplings to about the size of a golf ball and insert a cheese cube inside.
Roll the meatballs in the breadcrumbs.
Place the dumplings on a baking sheet and spray with oil to crisp them up.
Bake at 400 for about 20 minutes or in the Air Fryer for about 15 minutes.
Turn the meatballs halfway through cooking.
Serve with a spicy mayo.
I like to make my spicy mayo with one of our hot sauces (1 cup of mayonnaise and about 1 tbsp of hot sauce, depending on your taste).
You can also make a mayo with our salt-free mixes.
