ITALIAN VEGETABLE AND LUPINE SOUP

Do you like soup?
I would eat them for lunch, dinner, supper!!! For real!
I'm sharing with you a food I discovered a few months ago that I LOVE. ❤️
Lupine flakes!
A legume that is very low in carbohydrates, but high in protein.
I put it in my Italian-style vegetable soup to add a good dose of protein 😃
INGREDIENTS:
Vegetables that you have in the fridge or in your freezer optimal.
For my part I put, zucchinis, onions, celery, carrots, broccoli.
1 liter of chicken broth
1 cup of tomato sauce
2 cups of water
2 cloves garlic, finely chopped
1 cup of lupine flakes
2 tbsp. of "Italian" or "Spaghetti" mix
Salt and pepper
If you have a little parmesan crust lying around in the freezer, you can add that too ❤️
Simmer until vegetables are tender.
