DUCK PARMENTIER
I offer you a tasty way to cook duck!
Ingredients
3-4 small onions
2 tbsp. tablespoon of "Grill" mix
1 whole duck
Oil
Salt and pepper
For the sauce
1 cup of white wine
1 carrot
1 celery branch
2 cups of water
Duck carcass
½ tsp. xanthan gum (or thickener of your choice)
Preparation
Cut the onions into small wedges, place them at the bottom of the ovenproof dish, add a good drizzle of oil and the “Grill” spices to mix well.
Place the duck on the onion mixture, well salted and peppered. Bake for 4h00 at 325 with a lid. 30 minutes before the end of cooking, remove the lid to make a golden and crispy skin.
Take out of the oven and let the duck cool a little by removing it from the dish. Remove as much as possible from the onions that you can add to the duck once boned. Once cool, remove the bones from the duck and return the bones to the dish, adding the carrot and celery. Add the white wine, water and simmer for about 30 minutes over low heat.
Strain the broth and return to the pot, slowly adding the xanthan gum until the sauce is the desired texture.
Make the recipe for your favorite mash (cauliflower, potato, root vegetables etc ...) and assemble as in the photo :-)
