I don't know about you, but I LOVE meals made on a plate. It's simple, fast and so tasty! We just put the meat we have on hand, the vegetables we forgot in the back of the fridge, and of course one of our spice mixes, voilà! Dinner is done!
Also, if your freezer is optimal, it will take you 3 minutes to make.
2 nice cod fillets or white fish of your choice
1 case of cherry tomatoes
½ red onion, sliced into rings
½ cup kalamata olives (or more to taste)
1 cup crumbled feta cheese
1 to 2 tablespoons of the Greek or Italian mixture (I use 2 for maximum flavor)
Olive or avocado oil
Salt and pepper
Start the oven at 350
Place the fillets on a baking sheet lined with parchment paper and season with salt and pepper.
Place the remaining ingredients in a bowl and mix well. Place the mixture on the cod fillets and bake for about 20 minutes or until the cod is cooked through.
